Ingredients
For the Chicken
800 g chicken breast or boneless chicken thighs
1 medium onion, chopped
4 cloves garlic, minced
1½ teaspoons curry powder
¼ teaspoon turmeric
½ teaspoon white pepper
½ teaspoon black pepper
Salt to taste
3 cups water
For the Rice
6 cups long-grain rice
Homemade chicken stock
Water (if needed)
Vegetables
1 cup diced carrots { 2 whole carrots}
1 cup green peas
1 cup sweet corn
½ cup chopped green beans (optional)
1 finely dice onion
3 spring onions, sliced
Other Ingredients
3 eggs
5 tablespoons vegetable oil
1 tablespoon butter (optional)
1 ½ tablespoon light soy sauce
1 teaspoon white pepper
1 teaspoon curry powder
1 chicken cube (Maggi)

Instructions

Now add these steps one by one.

Step 1 – Cook the Chicken

Place the chicken in a pot.

Add the chopped onion, minced garlic, curry powder, turmeric, white pepper, black pepper, salt, and water.

Cook until the chicken is tender.

Remove the chicken and reserve the stock.

Allow the chicken to cool, then cut it into bite-sized cubes.
Heat 2 tablespoons of vegetable oil in a large pan over medium-high heat. Add the seasoned chicken and lightly fry until golden brown and cooked through, about 5–7 minutes. Remove the chicken from the pan and set aside.

Step 2 – Cook the Rice

Wash the rice thoroughly.

Cook it in the homemade chicken stock until just cooked.

If needed, add a little water to finish cooking.

Spread the rice on a tray or large plate and allow it to cool slightly.

Step 3 – Fry the Eggs

Beat the eggs.

Lightly fry them in a little oil.

Remove and cut them into small pieces.

Set aside.

Step 4 – Stir-fry the Vegetables

Heat the vegetable oil in a large pan.

Add the finely diced onions, sauté the onions for about 2 – 3 minutes

Add the carrots and cook for 2 minutes.

Add the green beans (if using), sweet corn, and green peas.

Stir-fry for another 2–3 minutes until the vegetables are bright and slightly tender.

Add the curry powder, white pepper, and crushed Maggi cube. Stir well for about 30 seconds until the spices become fragrant and evenly coat the vegetables and chicken.

Step 5 – Add the Chicken

Add the cooked diced chicken.

Stir-fry for 2–3 minutes so the chicken absorbs the vegetable flavors.

Step 6 – Add the Rice

Add the cooked rice.

Gently mix everything together until the rice is evenly combined with the vegetables and chicken.

Taste and adjust the seasoning if needed.

Step 7 – Finish the Dish

Fold in the scrambled eggs and mix until evenly distributed.

Drizzle the light soy sauce over the rice and stir until everything is evenly coated.

Add the sliced spring onions.

If using butter, stir it in at the very end for extra richness.

Serve hot and enjoy!
